PERKS Recipe Winner: Broccoli Stuffing Casserole

Who says you can only make these recipes during the holidays. Nancy O. from Rochester says this is a recipe that her picky family enjoys any time but especially during the holidays.


  • (2)  10 oz. packages  of cut-up broccoli cooked (save 1 cup of broccoli juice)
  • 1/4 lb. of margarine
  • (1)  can of mushroom soup
  • 1 cup or more of bread stuffing mix
  • 1/2  cup of parmesan cheese
  • 1 can of dried onion rings


Cook broccoli.  Melt margarine in pan and mix in the stuffing mix.  Grease casserole.

Place in layers:  broccoli, stuffing mix, soup and onion rings.  Alternate three times.  Pour juice over top of casserole and sprinkle cheese on top.

Bake one hour at 325 degrees uncovered.  If it starts to brown too fast, cover.

Can assemble a day ahead.
