PERKS Recipe Winner: Pecan Delight Pie

This recipe would be a great addition to any potluck. Tracie D. of New Orleans says you can top it with some of your favorite flavors.


  • 3 egg whites–stiffly beaten
  • 1 cup sugar
  • 1 cup chopped pecans
  • 2 tablespoons of cocoa
  • 1 teaspoon vanilla
  • 23 finely crushed ritz or saltine crackers
  • 9 oz whip cream


Beat egg whites to stuff then slowly add sugar until it’s a stiff meringue.  Using a large cooking spoon, fold in  pecans crackers and vanilla.  Spread into a buttered 9 in pie plate to form a shell.

Bake at 350 for 30 minutes. When this is cooled add cool whip flavored with cocoa.

Chill and savor later.

*If you wish, you can top with mini chocolate chips or shaved chocolate or anything you desire.
