PERKS Recipe Winner: Chocolate Espresso Tart

This recipe would make a decadent end to a delicious feast. Michelle H. of Madison says this recipe won’t disappoint.

Chocolate Tart Dough:


  • 7oz  room temperature butter (unsalted)
  • ½ C + 2T  powdered sugar
  • ¾ t  salt
  • 3  yolks
  • 2 1/3 C + 2T all-purpose flour
  • 1/3 C + 2T  cocoa powder


  1. Preheat oven to 325 F
  2. Cream butter, salt and sugar for 5 minutes
  3. Add yolks one by one, scraping after each one
  4. Whisk the flour and cocoa powder together and add to butter mixing until combined
  5. Roll your dough between two pieces of parchment and gently fill your tart pan
  6. Poke holes in your dough and bake for 10 minutes

*You will have extra dough to freeze, make cookies or small tarts


Chocolate Espresso Filling:


  • ¾ lb  semi-sweet chocolate
  • 12 oz (3 sticks) butter
  • ¾ C  granulated sugar
  • ¾ C  strong coffee or espresso
  • ½ t  salt
  • ½ t  vanilla extract or paste
  • 6 egg yolks


  1. Preheat oven to 325 F
  2. Place the chocolate in a large bowl
  3. add butter, coffee, sugar, salt, vanilla into a pot and bring to a simmer, stirring often
  4. Pour this mixture over the chocolate and whisk until smooth
  5. Whisk in egg yolks then strain mixture into prebaked chocolate tart crust
  6. Bake until center is just set and move into the fridge to set completely
  7. Make slices with a clean, hot, sharp knife

*Yields 1 12” tart
