This is a fun, tangy spin on a holiday classic. It uses less fat and sugar than most recipes we see for sweet potatoes but the orange should give it a nice little kick. Susan from Rochester NY says the sauce can be made ahead of time and frozen. We also think if you’re feeding a big table, you might want to double the recipe or more.
- 2 pounds sweet potatoes or yams
- ½ cup sugar
- 1 Tablespoon cornstarch
- 1 teaspoon salt
- 1 cup orange juice
- 2 tablespoons butter or margarine
- In saucepan, combine sugar, salt and cornstarch. Slowly add in orange juice. Add butter. Cook until mixture thickens. ( will continue to thicken after heat s turned off.
- Pare and cut sweet potatoes in desired size. Arrange in casserole, Pour orange sauce over potatoes and bake at 400 degrees for about half hour or until tender.
